How to Make Fluffy Quinoa.

Make It
Rinse 1 cup quinoa in a fine mesh strainer under cold water until the water runs clear.
Add to a saucepan with 2 cups water and a pinch of sea salt.
Bring to a boil over medium-high heat.
Cover, reduce to low, and simmer 15 minutes, until the water is absorbed.
Remove from the heat, keep covered 5 minutes, then fluff with a fork.
Notes
Rinse it properly. Quinoa has a natural coating called saponin that tastes bitter and soapy, and rinsing is the only way to get rid of it.
It is ready when the grains have uncurled and you can see the little white spirals.
Keep the lid on until the five minutes are up. That final steam is what makes it fluffy rather than wet.
Quinoa carries more protein than rice, but not enough to be your Quality Protein. It is still a carb on the plate.
Cook extra and use it in a Protein Bowl or No B.S. Salad. It reheats with a splash of water.
