How to Make Green Goddess Dressing.

Serves 10–12 · Prep: 10 min

Make It

  1. Add 1 ripe avocado, ½ cup fresh basil, ½ cup fresh parsley, ¼ cup fresh chives, 1 small garlic clove, the juice of 1 lemon, 2 Tbsp extra virgin olive oil, and ½ tsp sea salt to a blender or food processor.

  2. Blend until smooth, scraping down the sides as needed.

  3. Add 2–4 Tbsp water to reach the consistency you want.

  4. Taste and adjust the lemon or salt.

Notes

  • Avocado instead of mayonnaise. It gives you the same creamy body with real food doing the work.

  • It thickens in the fridge. Loosen it with a splash of water and a squeeze of lemon before serving.

  • Herbs are the point. Swap in dill, cilantro or tarragon depending on what you have.

  • Less water makes a dip, more makes a dressing.

  • Pour it over a No B.S. Salad, massaged kale, or use it as a dip with raw veggies.

  • Counts as Healthy Fats at 2 Tbsp.
