How to Make Healthy Chicken Nuggets.

Make It

  1. Heat the oven to 350°F. Spread 1 cup cooked quinoa evenly on a parchment-lined tray and bake 20–25 minutes, stirring often so it does not burn. Once crispy, set aside to cool.

  2. Raise the oven to 390°F.

  3. Whisk 1 egg with ¼ cup grated parmesan in a bowl. Put the crispy quinoa on a separate plate.

  4. Cut 1 lb chicken breast into chunks. Dip each piece in the egg, then coat in the quinoa.

  5. Place on a parchment-lined tray and bake 15–20 minutes, until cooked through.

Notes

  • The quinoa has to be crispy before it goes on the chicken. That step is what gives you a coating rather than a soggy crust.

  • Make the crispy quinoa ahead and keep it in a jar. It cuts this recipe to 20 minutes.
