How to Make Tahini Dressing.

Make It
Add ¼ cup tahini, the juice of 1 lemon, 1 small garlic clove minced, ¼ tsp sea salt, and a pinch of black pepper to a small bowl.
Whisk to combine. It will seize up and look thick and grainy. That is normal.
Slowly add 3–4 Tbsp cold water, 1 Tbsp at a time, whisking after each addition until smooth and pourable.
Taste and adjust the lemon or salt.
Notes
Do not panic when it seizes. Tahini always thickens and clumps the moment acid hits it. Keep whisking and adding water and it comes back smooth.
Use cold water. It gives you a creamier, lighter dressing than warm.
Stir your tahini well before measuring. It separates in the jar, and the thick paste at the bottom needs far more water.
Less water makes a dip, more makes a dressing. Adjust to what you are using it for.
Extra flavor: a pinch of cumin or a spoon of fresh chopped parsley.
Pour it over a No B.S. Salad, roasted vegetables, or massaged kale.
