Sesame Ginger Beef with Zoodles.

1 lb lean ground beef, 5% fat
Non-Starchy Veggies
2 medium zucchinis, spiralized
Healthy Fats
2 Tbsp toasted sesame oil
Sauce
¼ cup coconut aminos or tamari
2 Tbsp rice wine vinegar
1 Tbsp monk fruit or allulose
Extras
1 Tbsp fresh grated ginger, 3 garlic cloves minced, sea salt and black pepper
Make It
Mix the coconut aminos, rice wine vinegar and sweetener in a small bowl and set aside.
Heat a dry non-stick pan over medium heat, add the beef and cook 7–10 minutes until cooked through.
Move the beef to one side of the pan, add the sesame oil, ginger and garlic, and cook 1 minute.
Pour in the sauce and toss the beef to coat. Cook another minute.
Add the spiralized zucchini and heat through briefly, or keep them separate if packing for later.
Notes
Add the zoodles at the very end and only heat them through. Any longer and they release water into the sauce.
Packing it for lunch? Keep the zoodles separate and combine when you reheat.
Coconut aminos is naturally sweeter, so use less sweetener. Tamari needs the full tablespoon.
