Tofu Caesar Summer Rolls

14 oz (400g) organic firm tofu
2 Tbsp parmesan, grated
Non-Starchy Veggies
4 romaine lettuce leaves, shredded

½ small avocado, sliced
1 Tbsp coconut oil for frying

4 rice paper wrappers
Extras
2 Tbsp Caesar dressing for dipping (seed-oil free brand or homemade), sea salt and black pepper
Make It
Slice the tofu into thin rectangles and press with a towel to remove excess moisture.
Heat the coconut oil in a pan over medium-high heat. Add the tofu and season generously with salt and pepper. Cook 4–5 minutes per side until golden. Let cool, then slice into strips.
Dip one rice paper in a bowl of warm water. Remove when slightly softened and place carefully on a plate lined with a damp cloth.
Place a few strips of tofu in the centre, top with avocado and parmesan, then the shredded lettuce.
Fold the sides in first, then wrap tightly. Set aside on a plate lined with a damp cloth and repeat with the rest.
Serve straight away with the Caesar dressing for dipping.
Make It Your Own
Swap the tofu for grilled chicken or shrimp
Herbs: fresh basil or mint tucked in with the lettuce
Heat: a spoon of chilli crisp in the dipping sauce
Notes
Dip your fingers in water so your hands are damp when handling the wrapper. It will stick less.
Press the tofu properly. The drier it is, the crisper it fries.
