Build Your Meal

Quality Protein
½ block extra firm organic tofu

Non-Starchy Veggies
⅔ cup frozen green peas
2–3 cups side salad

Healthy Fats
¼ avocado
1 Tbsp olive oil

Complex Carbs (Optional), choose one
1 serving seed crackers (Mary's Gone Crackers, Top Seedz)
1 slice sourdough toast

Extras
A handful of mint leaves, 1 Tbsp lemon juice, sea salt and black pepper

Make It

  1. Cover the frozen peas with boiling water and leave a few minutes until defrosted, then drain.

  2. Transfer to a blender with the crumbled tofu, avocado, mint, olive oil and lemon juice.

  3. Season with salt and pepper and blitz until a paste forms.

  4. Add more mint or lemon to taste.

  5. Serve over your side salad, with sliced veggies for dipping, or as a filling in a Travel Sandwich.

Notes

  • The vegan answer to chicken salad. Spread it, dip it, or spoon it over greens.

  • Press the tofu first. Wet tofu makes a loose paste.

  • Meal prep: it keeps three days in the fridge.

  • Spoon it over a No B.S. Salad and it becomes your Quality Protein and one Healthy Fat, so add your dressing as the second.
