Coco's Go-To Meat Bowl.

Build Your Meal

Quality Protein
6–8 oz sirloin steak, cut into 1-inch pieces

Non-Starchy Veggies
2–3 cups fresh broccoli florets

Healthy Fats
1 Tbsp avocado oil
½ small avocado, sliced

Complex Carbs (Optional), choose one
½–1 cup cooked brown rice, cooled
½–1 cup cooked white jasmine rice, cooled
½–1 cup cooked quinoa

Skipping the Complex Carb?
1–2 cups cauliflower rice, or double the broccoli

Extras
½ tsp sea salt, ½ tsp black pepper, 1 Tbsp tamari or ponzu, 1 tsp sesame seeds, 1 Tbsp chopped chives or parsley

Make It

  1. Heat the avocado oil in a large skillet over high heat.

  2. Season the steak with salt and pepper.

  3. Add the steak and cook undisturbed 4–5 minutes until browned. Flip and cook 3 minutes more.

  4. Meanwhile, steam the broccoli 3–4 minutes until bright green and tender-crisp.

  5. Add the tamari or ponzu to the steak and toss 1 minute until coated.

  6. Layer the rice or quinoa in your bowl, top with the broccoli and steak.

  7. Sprinkle with sesame seeds and herbs. Add the avocado.

Make It Your Own

  • Swap the steak for 6–8 oz ground turkey or 93% lean ground beef. Cook 6–8 minutes, breaking into small pieces until browned.

  • Heat: chilli flakes or a spoon of chilli crisp

  • Acid: a squeeze of lime

Notes

  • Tamari or coconut aminos instead of soy sauce if you are avoiding gluten or soy.
