3 eggs + ½ cup cottage cheese

Non-Starchy Veggies
2–3 cups side salad, or sautéed greens, roasted tomatoes, mushrooms

2 Tbsp cheese
The yolks in 4–5 whole eggs

Complex Carbs (Optional), choose one
1–2 small slices sourdough or Ezekiel toast
½–1 cup roasted potatoes or sweet potato

Skipping the Complex Carb?
1 serving low-carb bread (Hero, Royo)

Make It

  1. Cook your eggs any style. Friedscrambledpoachedboiled, or as an omelette.

  2. Warm or sauté your veggies, or dress your side salad.

  3. Toast your bread if having one, and spread the avocado on it.

  4. Plate half your plate veggies, a quarter protein, a quarter carb if having one.

Notes

  • Eggs are not just for breakfast. This is the meal for the night you cannot face cooking, and it is a Balanced Meal like any other.

  • Egg yolks count toward your Healthy Fats. At 4 to 5 whole eggs, cook in a spray and pick either the avocado or the oil.

  • A big side salad turns it from breakfast into dinner. Dress it properly and it stops feeling like a compromise.
