How to Cook Perfect Chicken Thighs.

Make It
Pat 1 lb boneless, skinless chicken thighs dry with a paper towel.
Lightly coat with avocado oil spray, then season both sides with sea salt and black pepper.
Heat a skillet over medium-high heat until hot.
Add chicken thighs in a single layer. Don't crowd the pan.
Cook undisturbed for 5–6 minutes until golden brown underneath.
Flip and cook another 5–6 minutes until internal temperature reaches 165°F.
Rest 5 minutes before slicing or serving.
Notes
Chicken thighs are more forgiving than breast. Their slightly higher fat content keeps them juicy and harder to overcook. Pat them completely dry before cooking for the best sear, and resist the urge to move them around in the pan. Let the heat do the work.
