Build Your Meal

Non-Starchy Veggies
3–4 cups roasting veggies (bell peppers, broccoli, cauliflower, Brussels sprouts, green beans, onion, or zucchini)

Quality Protein, choose one
1 lb chicken breast or thighs
1 lb salmon
1 lb shrimp
1 lb steak

Healthy Fats
2 Tbsp olive oil or avocado oil

Complex Carbs (Optional), choose one
½–1 cup sweet potato, roasted on the pan
½–1 cup rice or quinoa on the side
2–3 small corn or cassava tortillas (Siete)

Skipping the Complex Carb?
1 serving low-carb wrap (Hero, Royo, Egglife, Crepini)

Extras
Sea salt and black pepper
Seasoning of choice (below)

Make It

  1. Preheat the oven to 400°F and line a sheet pan with parchment.

  2. Cut the veggies into similar-size pieces. Toss with the oil, sea salt, black pepper, and your seasoning, then spread in a single layer.

  3. Add your protein and roast:
    Chicken: Cut into strips or bite-size pieces and roast with the veggies from the start for 20–25 minutes, until it reaches 165°F.
    Steak: Cut into strips or bite-size pieces and roast with the veggies from the start, checking from 12–15 minutes for your preferred doneness.
    Salmon: Add after the veggies have roasted for 10 minutes, then roast for 12–15 minutes more.
    Shrimp: Add after the veggies have roasted for 15 minutes, then roast for 6–8 minutes more, until pink and opaque.

  4. Plate half your veggies, 6–8 oz protein, and your Complex Carb if having one.

Make It Your Own

Four ways to build it, same formula every time.

One Pan Salmon
Salmon with broccoli, green beans, or cherry tomatoes. 1 tsp dried thyme, 1 tsp dried rosemary, 2 cloves minced garlic. Finish with lemon.

Shrimp and Broccoli
Shrimp with broccoli and bell peppers. 2 cloves minced garlic, 1 tsp paprika, ¼ tsp red pepper flakes.

Chicken Fajitas
Chicken with bell peppers and onion. 2 tsp cumin, 2 tsp chili powder, 1 tsp paprika, 1 tsp garlic powder. Finish with lime. Serve with tortillas if having your Complex Carb, and avocado if you want it.

Beef Fajitas
Steak with bell peppers and onion. 2 tsp cumin, 2 tsp chili powder, 1 tsp dried oregano, 1 tsp garlic powder. Finish with lime. Serve with tortillas if having your Complex Carb, and avocado if you want it.

Notes

  • Spread everything in a single layer. A crowded pan steams instead of roasting.

  • Hardier veggies like broccoli, cauliflower, and Brussels sprouts take longer than zucchini, green beans, or cherry tomatoes. Cut the hardier ones smaller when combining them.

  • Use garlic powder rather than fresh in the fajitas. Fresh garlic can burn during the longer roast.

  • Cook the full pound even if you are one. Tomorrow's lunch is a No B.S. Salad with zero effort.
