Serves 1 · Prep: 5 min · Chill: Overnight

Build Your Meal

Liquid Base
1¼ cups unsweetened almond or coconut milk

Quality Protein
1½ scoops protein powder (unflavored, vanilla or chocolate)

Healthy Fats
3 Tbsp chia seeds
Topping: 2 Tbsp nuts or seeds OR ¼ cup low-sugar grain-free granola

Complex Carbs (Optional)

  • ½–1 cup berries or other low-sugar fruit

Make It

  1. Whisk the milk and protein powder together until smooth. Add the chia seeds and whisk again. Let sit for 5 minutes, then whisk once more to break up any clumps.

  2. Cover and refrigerate overnight. In the morning, loosen with a splash of milk if needed, then add your topping and fruit if having it.

Make It Your Own

Ceylon cinnamon: ⅛ tsp

Vanilla extract: ¼ tsp

Lightly sweetened cacao nibs or unsweetened coconut flakes: 1 Tbsp

Notes

  • Add the milk and protein powder first, then the chia seeds. This helps prevent clumps.

  • Don't skip the second whisk after 5 minutes. It helps the chia distribute evenly as the pudding begins to thicken.

  • Choose an unsweetened nut milk (no oats). Califia, Malk, and Elmhurst are easy options.

  • If using granola, choose a low-sugar option such as Purely Elizabeth Keto Granola.

  • Recommended protein powders.
