Protein Pancakes.

High-protein pancakes topped with unsweetened nut butter, blueberries, and strawberries.

Build Your Meal

Quality Protein
2 large whole eggs
½ cup cottage cheese

Complex Carbs
½ cup organic old-fashioned rolled oats

Healthy Fats
1 tsp butter, ghee, or avocado oil for cooking
Plus choose one: 1 Tbsp unsweetened nut butter OR 2 Tbsp chopped nuts or seeds

Extras
½ tsp baking powder
¼ tsp vanilla extract
⅛ tsp Ceylon cinnamon
Pinch of sea salt

Make It

  1. Add the eggs, cottage cheese, oats, baking powder, vanilla extract, Ceylon cinnamon, and sea salt to a blender. Blend until smooth.

  2. Heat a nonstick skillet over medium heat and lightly grease with butter, ghee, or avocado oil.

  3. Pour about ¼ cup batter per pancake. Cook for 2–3 minutes, until the bottoms are golden and the pancakes are set enough to flip. Flip and cook for another 1–2 minutes, until cooked through.

  4. Top with your nut butter, nuts, or seeds. Add your berries or syrup if having them.

Make It Your Own

Berries: ¼ cup fresh or frozen

Sweeter: a few drops of pure monk fruit or stevia leaf extract

Syrup: 1–2 Tbsp zero-sugar maple syrup OR 1 tsp regular maple syrup

Notes
